Oil is not used with Hobart sharpeners! clean stones clean knife is important.  With all the adjustments correct and the sharpener in good shape you can get paper thin even slices and reduce wear in the slicer. Hobart service manuals and operators manuals on these slicers are on the net to aid in getting the slicer in top shape. It might be wise to have a Hobart tech or a knife guy set this up and show how it is used correctly. The 1612 and 1712 are built like tanks compared to what is out today!
